Vegan MoFo Day 20 - Creamy Pumpkin Pie

Another AWESOME recipe from Vegan Vitality
Next time I'm gonna leave out the sugar 'cos this is a bit too sweet for me even though there's only 100g in the entire recipe.
So I'll just have to make another one to make sure it'll taste OK.
Oh the sacrifices I make

GO VEGAN!
Go MoFo!

Pumpkin pie is my favorite, though I admit to sometimes making it with butternut squash, which I think is even better than actual pumpkin. Your crust looks so good!

(Psst! This was made with butternut too.)

i shit you not, Jeni - when i saw your pie i said, "oh, WOW!" out loud. :) butternut you say?! i do the same - i mean, it's easier for me to find organic butternut than organic pumpkin and no one yet could tell the difference. eeeehehehehehee!

Ha ha ha... I love that you are going to have to "take one for the team" and make another pie.

That one is beautiful! Sorry to hear it's a little too sweet.

So who's eating all these delicious Mofo goodies you've been whipping up on the daily? You should send the leftovers to Memphis.

I love pumpkin pie! Looks like the filling on this one kept really solid, which is great-- no one like a runny pie. The crust looks like graham cracker-- is it gluten-free?

This did stay together really well, the crust is wholemeal flour, oatmeal, wheatgerm and margarine so definitely not gluten free.
