Vegan MoFo IV Day 23: More Pancakes

Yes more pancakes! I've had my eye on this recipe from the awesome Eat Pure blog ever since Sarah first posted about it. Sarah's mum and dad own Ely's To Go in Youngstown, Ohio. JEALOUS!
So if you're in the vicinity go and say hi and if you're not make these pancakes now. 
They are my favourite.

I make zucchini pancakes a lot, but I've never added corn or coconut milk. These sound delicious!

I am also a fan of zucchini pancakes, but like jodye I've never added corn or coconut milk before. These sound SO good, I was going to make scrambled tofu for dinner but now.. I might make these instead!

These sound really good. I have made zucchini and corn pancakes (with our huge patty pan squash and zucchini harvest, I tried adding it to nearly every imaginable recipe ;)), but have never tried making them with coconut milk. I have no doubt these tasted delicious! :)
