Necessity is the mother of invention so they say and this was certainly true when I was craving quiche but had no tofu. I just used mashed potato instead and it was delicious!
I will have to make this again and actually write down the exact measurements to share with you all. Ahh the sacrifices I make......

Genius! I'm sure this would be fantastic for people who have no access to tofu (those exist right?). Or people like me who just like quiche, ha!

absolutely brilliant, Jeni! a potatoey quiche. i don't think dishes get much better than that. i see those green olives on your salad, too - great minds think alike! i put them on my salads whenever i get the chance. so yum!
I'm going to second that brilliant. I'm not fond of tofu in a quiche but potato would be good. You can't go wrong with potato.

Yes, please post the recipe! I'm not the biggest fan of tofu honestly. But potatoes are another story!!!

I'm excited to see this recipe! I've been wanting to make a vegan quiche for the longest time, but due to my current living situation I don't always have access to tofu. (Yes, Islaborg, those people do exist!) While I don't always have tofu in the house, I do have more then enough potatoes! I hope the recipe is posted soon.
