Half the bag went into some awesome breakfast Juices and seeing as Salad is our main food at the moment and I'm always looking out for new Salad dressing ideas I thought I would make a dressing out of the other half.
I'm afraid the quantities are a bit hit and miss but it goes something like this.
8 Fresh Figs
2 Tablespoons Olive Oil
2 Tablespoons Balsamic Vinegar
2 Tablespoons English Mustard (Coleman's)
Salt
Black Pepper
Just blitz it all up in the blender and check the taste to your preference. This will keep in the fridge for 5 days and it really is very tasty.
GO VEGAN!

This sounds excellent! I know figs and balsamic are a winning combination and as a salad-dressing I can imagine it being ultra-yum!

There's actually a fig tree right outside my apartment building, but they always stay hard and green and pretty small :( I wonder if they would ripen if I picked some and put them in a paper bag?
I put figs into our green smoothies, but they're dried ones, soaked overnight. Do you think they would work in this dressing? If so, I must make it!

we have 2 types at the store lately. the purple type and the green ones. I think the green ones look like "shrek boogers". mmmmm... boogers :)
Ive never tried figs before. Sounds yummy though. i relly need to put my juicer to better use!

something i realized i had been missing my whole life before moving to the northwest was figs. they are my favorite fruit, especially fresh. i like to smoothie them with bananas (and kale) and baked in a nice tart crust is always tasty. i just aquired some figs recently and made jam (following the jam package instructions) so now my toast is awesome in the morning. but i usually just eat them raw and whole before i make time to be creative.
