Figaro! Figaro!

OK - what to do with a bag of freshly looted Figs?
Half the bag went into some awesome breakfast Juices and seeing as Salad is our main food at the moment and I'm always looking out for new Salad dressing ideas I thought I would make a dressing out of the other half. I'm afraid the quantities are a bit hit and miss but it goes something like this. 8 Fresh Figs 2 Tablespoons Olive Oil 2 Tablespoons Balsamic Vinegar 2 Tablespoons English Mustard (Coleman's) Salt Black Pepper Just blitz it all up in the blender and check the taste to your preference. This will keep in the fridge for 5 days and it really is very tasty.
GO VEGAN!

This sounds excellent! I know figs and balsamic are a winning combination and as a salad-dressing I can imagine it being ultra-yum!

I just love fresh figs - I often have them in salad, but hadn't thought of using them as dressing!

Ohhh yum! I LOVE fresh figs and just polished off a full pint from Whole Foods. This salad dressing idea sounds awesome!

Thanks! I have half a big container right now. I just eat them plain because I don't know what else to do with them!

There's actually a fig tree right outside my apartment building, but they always stay hard and green and pretty small :( I wonder if they would ripen if I picked some and put them in a paper bag?

I put figs into our green smoothies, but they're dried ones, soaked overnight. Do you think they would work in this dressing? If so, I must make it!

Penny - I really don't see why dried Figs wouldn't be just as good in this dressing - try it and let us know.

all fresh figs must go directly into my mouth!

we have 2 types at the store lately. the purple type and the green ones. I think the green ones look like "shrek boogers". mmmmm... boogers :)

something i realized i had been missing my whole life before moving to the northwest was figs. they are my favorite fruit, especially fresh. i like to smoothie them with bananas (and kale) and baked in a nice tart crust is always tasty. i just aquired some figs recently and made jam (following the jam package instructions) so now my toast is awesome in the morning. but i usually just eat them raw and whole before i make time to be creative.
