Vegan MoFo Day 20: A Sunday Roast on a Monday

Yeah that's Punk Rock that is.
What isn't quite so Punk Rock is having your boiler die, your new blender jug crack and your extension lead break. No...that's just chaos and also sums up my day pretty well. New boiler installed, blender jug thrown out in disgust and extension lead taken apart and fixed - this gal wasn't in the mood for cooking. Much....... I called upon a store cupboard favourite
Granose Nut Roast Mix. HURRAH! All it took was water and bunging in the oven. To accompany this veritable bag of Nutty goodness, I roasted some Potatoes in Olive Oil and Rosemary, steamed some Carrots and Broccoli, made some Gravy and served it all up with a dollop of Cranberry Sauce.
It was super scrummy and perfect food for filling my boiler mending boyfriend's tummy. Today's song is I'm Going Slightly Mad - by Queen. Because amidst all the chaos this seemed so fitting. Laters Y'all!

wow.. that looks thanksgiving worthy! And that nut roast in a bag looks interesting... I tried to make something, which I think was supposed to be similar, but it didn't look anywhere near as solid. You're a plethora of information Heathen Vegan!

Guava - When I sat down to eat I thought this would be good for Christmas Dinner! Plethora is such a cool word. I'm gonna use that word today.

rach-ums - it was a lovely dinner. So comforting and satisfying.

Whoa.... yum! I love roasted potatoes. I've never had nut roast, but it sounds good. And Queen certainly do rock!

I absolutely love roasted root veggies, especially potatoes with rosemary. I just had breakfast, but I'm already thinking ... roasted potatoes for lunch.

The whole meal looks divine.

yummy. that nut roast does sound good. i would be pretty sad not having a trader joes. i am addicted to that place... and every time i go there, i always have the hottest cashier haha

sorry about your kitchen equipment torture. Even the smallest breakdown can be annoying. The digital readout on my stove (tells you what temp the stove is, timer, etc) dimmed about 3 years ago and we can't figure out how to fix it. sometimes if you cover it w/ your hands and peek in, you can barely see it. really really annoying. maybe I'll take it apart today and really break, um fix it.

Love that roasted meal. looks sooooo good!
