Vegan MoFo 2009 Day #6: Noodle doodle dandy

This morning I marinated some sliced up tofu in soy sauce, garlic, ginger and fresh lime juice and left it in the fridge for the whole day while I went about my business.
Then tonight I drained the tofu and fried it in peanut oil. Added mushrooms, red pepper, green beans and scallions.
The rice noodles were placed in boiling water for 4 minutes then drained. Then I mixed some soy sauce, lime juice, green chili, sugar and peanut butter all together. I totally eyeball this, just check and adjust to your preference.
Heat your wok up nice and hot, add sliced scallion, 2 crushed garlic cloves, teaspoon fresh ginger and a julienne carrot. Cook for 3 mins then add the drained noodles and the sauce.
And store bought spring rolls which took 12 mins in the oven served with some chilli oil and hoisin. Altogether a perfectly scrummy healthy meal ready and on the table in 20 mins! YUMMY! GO VEGAN! GO MoFo!!

Mmm, this is one of my favourite sort of meals. Really, can you ever go wrong when there is peanut sauce involved? I think not. :) -Eve

This looks awesome, I lovelovelove spicy peanutty sauces but the rest of the clan are either allergic or don't like spicy sweet. It's like my punishment, or something!

Oh wow that looks delicious! I'd so love to try something like that, but I'm afraid it wouldn't come out anywhere near as good. Seriously that tofu looks mouth watering!

Yum! I LOVE rice noodles and all my favorite veggies you put in. I've never tried peanut butter in my stir-fried noodles before but it sounds healthy and delicious!

Nice! I really need to start thinking about dinner that early in the day... I never do until I'm about to leave work, and then it's much too late to do stuff like marinate tofu!

Oh, yum! Spicy tangy peanutty rice noodles and tofu is my favorite meal ever (esp with some chili oil)! And so easy! I have to make it again soon. Thanks for the reminder!
