I heart Madhur Jaffrey ♥♥♥♥♥

And I heart my friend Anne who lent me her Madhur Jaffrey's Illustrated Indian Cookery cook book! YAY! If I told you we had Indian for dinner last night AND Indian for dinner tonight, what would you say? You'd say "Ooooh...let's see some photos of it all!!" wouldn't you? Ha dee ha ha ha.... I mentioned to Mr treehugger that I was dismayed I couldn't take a photo of all the wonderful grub and he simply shrugged and said that I will just jolly well have to make it again then! You can see why I love this man! Anyhooo onto the food, and whilst I am seriously lacking in pornz I will try my hardest to portray the wonderfullness of last nights and tonights food 'kay. Last Night Saag Aloo (Madhur Jaffrey doesn't use an ounce of ghee (hee hee hee) in her Saag recipe!!!) Mixed Vegetables in a Mustard and Cumin Sauce Black-eyed Beans with Mushrooms Uncle Ben's Boil in the bag Rice (yes yes I KNOW!!!) Tonight We still had leftovers of everything from last night except the Rice (doesn't Indian cuisine taste better the next day or what!!) So to accompany what was left I made: Chana Saag Spiced Basmati Rice (am I redeemed??) Cauliflower Pakoras Poppadoms Onion Relish Aubergine Pickle (this wasn't Madhur Jaffrey's) And a Partridge in a Pear Tree....LOL! I am so delighted to have been lent this book. I have to give it back on Sunday so I am frantically typing out lots of recipes and out of all the ones I have tried so far, the Spiced Basmati Rice, Cauliflower Pakoras and Mixed Vegetables in a Mustard and Cumin Sauce were just out of this world and are what I will make when I want to impress my omni friends from now on! I used Spices I'd never used before as well which is always exciting! (Kalonji and Black Mustard Seeds). I can post you the Aubergine Pickle recipe because it is one I have tweaked from numerous ones on the interwebs and it is so amazing and so easy you gotsta give it a try next time you make Indian food. Goes perfectly with Poppadoms! Aubergine Pickle Ingredients Red Wine Vinegar (about quarter of a cup plus a little more) 1 tablespoon bottled Water ½ teaspoon dried red Chilies ½ teaspoon ground Turmeric 1 inch piece of Ginger root, sliced 2 cloves Garlic, sliced 6 tablespoons Olive Oil 1 tsp Cumin Seeds 1 tsp Mustard Seeds 1 small Aubergine, peeled and cut into cubes 1 tsp Sugar Salt Method Use a small saucepan to cook this in. This will serve two people quite happily, along with their Poppadoms of course. Grind the red Chilies, Turmeric, half the Ginger and half the Garlic with 1 tablespoon of the Red Wine Vinegar and about a tablespoon of Water (I’ve done this with a hand blender and it worked fine – I just added a bit more water, the lumps didn’t make any difference). Heat the Oil and fry the Cumin and Mustard Seeds with the remaining Garlic and Ginger until browned. Add the ground paste and fry until drier (it will still be quite liquidy – this is good). Add the Aubergines and pour in enough Wine Vinegar to just come half way up the Vegetables. Add the Sugar and Salt and simmer until the Aubergines are tender and the Oil floats to the top. Leave to cool. We still have plenty of leftovers but I think even I couldn't make Indian food three nights in a row......or could I????????? Todays song is by the FANTASTIC Razorlight - Wire to Wire

I absolutely love Indian food. Love. Love. LOVE! My standing order at our local Indian eatery is Chana Aloo (chickpeas and potatoes ... yum), Mushroom Mutter (mushrooms and green peas), and two orders of Garlic Nan (one for the ride home and one to eat with dinner). :) Enjoy the book while you've got it!

For as much as we love Indian food around here, it's a sin that we don't have this cook book! Of course, DH has traveled all over India, so is quite hard to please unless the food is "authentic". I'm less choosy. Is there a Naan recipe in there? I do love and miss Naan bread. Sorry about your camera!!

I love Indian food and I love Madhur Jaffrey's recipes! I don't have this book, but I have "Madhur Jaffrey's World Vegetarian."

I heart Madhur Jaffrey, too! Her "World Vegetarian" cookbook was one of the first veg cookbooks I owned. I say go for three nights in a row!! Can't wait to see picks. :(

Marni - you're my kinda gal with your Naan for the ride home!

Jumbleberry - there is a Naan recipe but it uses eggs and yoghurt. The yoghurt could be subbed no problem but not sure about the egg (I'll have to ask rabbit - she makes Naan all the time). HOWEVER, there is a recipe for Poori (deep fried puffy bread) Paratha, and Chapati's which are all Vegan anyway. There's also a recipe for Moong Dal Pancakes with Peas that I've seriously got my eye on.

Whilst most of the recipes in this book are for meat dishes - it's the Sauces and Spice combinations that I'm excited about - you can make up any of the Sauces and sub the meat for veggies very easily.
Oooh and it's on Amazon.co.uk for under 5 quid!!

I do hope Santy brings you a new camera soon dude, pic-less posts just ain't the same >:o(
The naan recipe I use requires 1 egg worth of replacer (I use Orgran No Egg) and soya yoghurt. If you don't want to swede the recipe you have I will happily e-mail you the one I use. Just say the word!

that's too cool of your friend lend you such an awesome book! i love the hell out of some Indian food. it's one of my favorite types of food. mmmmmmmmm! everything you've made sound so fantastical, Jeni! i'm picturing it all now! glorious!

i think eating Indian food 3 days in a row sounds like a great idea! i'm so jealous!

I have heard nothing but rave reviews about this book! I so don't need a new cookbook, but I don't have an Indian cuisine one, so maybe I'll have to add it to my wish list!
Thanks for the aubergine recipe! Love it! And I think I could probably eat Indian food for a few weeks before growing tired of it!!

okay you definitely have to post pictures because it all sounds delicious but I don't know what half that stuff is!! err... I had to look up aubergines... I really need to go indian spice hunting..

Rabbit - you're the nicest rabbit I know! I've been a bit of a cowardy custard when it comes to making Naan and have avoided it so far. But having read the ingredients (see I am learning) on all the shop bought Naan it seems I have no choice but to overcome my fear.I'd love it if you emailed me your recipe - ooh and your pizza stone as well please.

I actually had the rest of the Indian food for my lunch today so yeah - I had Indian 3 days in a row!!

do you ever substitute anything for ghee? sometimes i just use a bit of marg (im trying to put on weight anyway so every little helps)

That all sounds amazing. I love indian food too and I love Madhur Jaffrey. She used to have a show on the food channel, she's awesome.

She was supposed to do a demo at my local indian restaurant once but she couldn't do it in the end - I was gutted. It ended up being this other indian chef that i've seen on TV who's name I forget, she was ace too. That was back in my omni days though and it was all fish. blergh.

I had indian food on Friday night, but I too didn't take pictures. I went to a veg place that has some vegan food. As long as I have samosas I'm happy :).

I am scared of Indian food because a while ago I had something (don't even remember what it was) that royally sucked! Everybody is making such awesome Indian foods though that it's making me want to give it another go!
