Quick Catch up

Hola mis amigos. 42 degrees here on the Costa Blanca today - that's a staggering 104.0 Fahrenheit. Spain has been given a severe heat wave warning and for Spain to declare that - you know it's gonna be bad!! Just wanted to give you a quick catch up on what I've been doing since I blogged last - and what better way to do so than by pictures. Hope everyone is well and keeping cool and for my Southern hemisphere buddies - hope you're keeping warm!
This delicious Mushroom and Spinach Omelette was fashioned from Fat Free Vegan's recipe. I did do it a bit differently though. I omitted the Corn Starch/Potato Starch completely and instead of using regular Salt - I added 1 teaspoon Black Salt. This Omelette was delicious and even Mr treehugger was impressed with it (he's not vegan). So ya all gotsta try this recipe 'kay.
This is a Tuna Friendly Tuna Salad and was Über YUM! I took a tin of fried Gluten gloop (a.k.a Mock Duck) mixed it with some Plamil's Mayo, flaked Seaweed and diced Gherkins (Pickles) and tossed it all together with Lettuce, Tomato and Onion. Deeeeeee-liscious! And a few photos of some little visitors in my garden this past week
This is Bob - he's gonna be a Swallowtail Butterfly when he grows up. Isn't he divine!
This is an Albino Praying Mantis!! Isn't he cool. I've never seen an Albino one before. These birds make the most AMAZING noise EVER! Not sure what they are 'cos I'm not up on my birds at all. Notice the Spanish wiring!!!

Perfect looking omelette-- and love the nature photos. The caterpillar is beautiful! I've never even heard of albino praying mantises.

Eat ice cream and try to stay cool.

When i was in Spain there was a bird that made a noise like a squeaky dog toy! Very confusing because I kept looking around for the dogs toy. Doh.

Bob's pretty damnd awesome! I just got some black salt in the mail and I can't wait to have some time in the morning to cook myself an omelet. Also I can't believe how hot it is over there, it's pretty bad here but not that bad!

wow, Jeni! 104 = too hot for me! stay cool, my friend! Bob = beautiful, and hooray for birds that make such lovely songs! praying mantises = my favorite! i've never seen an albino one before! your omelette looks too perfect, and i'm love'n your tuna friendly salad! :) i need to try making those omelettes again sometime - we tried a few months ago and they didn't work for us - just stuck to the pan and made a big 'ol mess. i think i need a new pan.

I love the heat - but if Spain is like France, there isn't much in the way of public air conditioning in buildings, etc. I hope you're enjoying it.

Your omelette looks delicious! I, too, made omelette lately from the new Isa Chandra Moscowitz's (sp?, the author of Vegan with a Vengeance, cookbook Vegan Brunch. It's yummy! I love the pictures of the creatures or visitors. They are unusual and I have never seen them so pretty like those. Beautiful animals!

That is one perfect looking omelet. When I made that recipe, I made a mess of it, looked like a right dog's dinner!! Tasted good though. I need to find black salt, my copy of VB just arrived. SQUEEE!

104 degrees would be welcome in Texas where it's been up to 107 for the past 3 weeks. I drink so much water I barely have an appetite for food.

Your omelet and salad look divine! I've never seen mock duck for sale. I'll have to look for that. Your garden pics are great! I love it when I find a mantis in my yard, the baby ones in my yard are that beige color, maybe they get green when they are grown ups? Perhaps you have a teenager :c)

oh WOW!! that's seriously an impressive vegan omelette... I have yet to try one of those... guess I'm too afraid of being disappointed and I figure it'll taste the same in scramble form... but damn... now you've got me a-hankerin' treehugger!

mmmmmm... I love that omelette recipe. I gotta train peepa to make it for me.

i've been fantasizing about fake tuna salad recently. anything w/ seaweed & I'm in.

that caterpillar is really cute. I haven't seen one in chrysalis form since I was a kid. I would go and check on it every day, but didn't see the butterfly emerge.

ps. 104 would incapacitate me. I'm a total baby.

I hope you are enjoying your insane heat. I am COLD here in Brisbane, I am so glad I am not living in a more southern part of the country. I am running up a big heat bill and making a massive carbon footprint, I'm afraid. Brrrr....

Bob is gorgeous. The praying mantis is very cool. I would not be cool if it were 42 degrees here.

The omelette looks awesome. I've only tried black salt with scrambled tofu, I'll bet it's divine in an omelette.

And the tunaless tuna sarnie looks really good too.

Patiently waiting for the mock duck post :)

What terrible heat your having! The hottest it got last summer in South Australia was 45 degrees, it was deadly! While your melting, im sitting in front of the heater, and its about to pour down with rain, isnt it crazy!?
Your omelette looks so delicious! I have to try it! Ive never made a vegan omlette before, im so glad people come up with alternative ingredients for us vegans :)

The omelette looks absolutely delicious! Cooking when it's that hot out is hard enough, so you should be doubly proud of yourself!

And...based on my extremely limited birding knowledge obtained from my single Ornithology class, I'm going to say that the birds is the last pic are swallows - probably barn swallows.
