Vegan MoFo Day 24: Mexican can can

Yes I can can.
Tonight's veritable feast was all out Mexican nosh - my favourite! I made: Guacamole (though I used proper Garlic because I can't imagine Guacamole without it - it's not right, and I didn't use Cilantro 'cos Mr treehugger Hates it with a capital H) Queso (this was good) Salad - this was just 4 different types of Lettuce, Cherry Plum Tomatoes and Spicy Mustard Dressing from Veganomicon Doritos Spicy Beans and Vegetables - this was Courgettes, Aubergine, Peppers (green and red) Onion, Carrot, Sweetcorn and Kidney Beans in a spicy Mexican Salsa. And Tortillas
Guacamole (how cute is my dish!!) and Queso
It was soooo blinking yum I couldn't stop eating and now I can't move. Sorry there's no more pictures but they came out even more crappy than usual and I wasn't gonna faff around when all that good nosh was waiting to be scoffed! Today's musical melody is totally AWESOME!!!
The music is by Session and that is all I know. I have googled and googled these guys to no avail but this song totally has me hooked! Into the treeeeeees

We totally had Mexican last night (haha... Vegan MoFo must have us cycling together!) and I don't have any pictures because I shoveled it down before I could take any! I could seriously live off guac (I always add a little veganaise to keep it creamy and fresh & some hot peppers for a kick!)

Cilantro ... People seem to love it or hate it. I don't know if you watch Project Runway, and if you don't I apologize for the following, but I saw an interview with Tim Gunn the other day (and I love Tim Gunn-isms) and he said, "The first time I tried cilantro, I was like, 'what is this?' and then I had it a second time. Now I can't get enough."

I love cilantro.

I also love Mexican food. I find that it's a good type of food to show people that they can eat vegan AND be satisfied.

We had mexican tonight too! Little tortilla pizzas that turned out so yummy with black beans & garden green tomato rice + relish. Wish we had your guac & queso though, they look deeelicious!

Doritos! I love Chilli Heatwave Doritos~ but I can't be trusted with those 'share' bags (aka nosebags!) so I had to give up crisps entirely. I'm jealous now :o(

that is a seriously sexy song. at 1 minute 10 seconds on that video, that is our campsite! we got totally flooded out (in the official glastonbury film, you can see our flag too). but happily later that day i got engaged. so it wasnt all bad!

Very nice. Mexican food is like home to me. And not just cause I live in Texas. It's so good. How can your husband hate cilantro? That's just...wrong. Ha ha.

I have one that I left on the stove too! got the coil marks to prove it. guess it could technically be my first cookbook ever, though it was my mom's Betty. Not her #1 betty (she has a couple versions).

I think you're right Guava - MoFo has us all syncing!

Lisa & Zoey - I really liked the Queso recipe. It does taste faintly cheesy, but I've resigned myself to the fact that,as a vegan, cheese as I know it just isn't gonna happen and I'm not comparing any vegan cheese to unvegan cheese anymore. Look upon it as just a scrummy dip for dunking your Tortillas in to and you'll LOVE it.

so not cool - I'm not familiar with Project Runway but I totally agree, people either like it or loathe it. I don't mind it myself but I don't use it cos Mr treehugger doesn't like it.incidentally he doesn't like Celery or Dill either!

Emma - so glad you liked the song - I just wish I could find more info about the guys who did it.
